Stardew Valley describes Parsnips as a spring tuber closely related to the carrot. It has an earthy taste and is full of nutrients.

Your character can plant them outside during the Spring time. This is actually one of the first crops you will most likely start planting because you will get a gift from Mayor Lewis. The package will have 15 parsnip seed packets that will help you to learn more about crops in Stardew Valley. Stardew Parsnips: Selling price

The base selling price for this crop is 35 gold coins, but you can definitely get more money.

Depending on the quality, you can get between 25 and 65 energy points and between 11 and 29 health points.

Of course, you can also buy from the Traveling Cart, but it will be much more expensive off-season. It might cost you anything between 100 and 1000 gold coins! Honestly, this is not a very good deal, so waiting for the right season might be the better choice.
